To prepare 5-6 servings of squid xhe:
- squid, without entrails and head, 1.2 kg;
- onion 150.0 g;
- carrots 100.0 g;
- a few cloves of garlic;
- oil 100.0 ml;
- acetic acid, concentration of 70%, 2 tbsp. spoons;
- soybeans 2 tbsp. spoons;
- sugar 1 tsp;
- salt to taste;
- coriander, red pepper in 1/2 - 1.0 tsp or take the finished mixture for Korean carrots.
1. When choosing a squid in a store, you should not buy its fillet. Typically, this imported product is developed after thawing and re-frozen. For squid hehe, it’s best to buy just gutted headless clam carcasses. Before cooking, squid should be thawed and pour boiling water over it.
The delicate skin will immediately curl. All that remains is to rinse the carcasses and take out thin but durable films from the inside.
2. Pour squid cleaned with water. Heat to a boil, cook for no more than two minutes.
Then immediately you need to remove from the water and cool.
3. Thinly chop the onion.
If there is no grater for Korean carrots to grate carrots on it, then first cut it into thin slices, and then chop with straws.
4. Heat the oil in a skillet very strongly. Put onions and carrots.
Hold on high heat for a couple of minutes. Put coriander and hot red pepper. They can be replaced with a ready-made mixture of seasonings for Korean carrots. Add finely chopped garlic. Take it to taste from 1 to 4 cloves. Remove the pan from the heat. Pour soy and vinegar into onions with carrots. Put the prepared dressing for squid hehe in a spacious bowl.
5. Cut boiled squid into thin rings or strips.
6. Connect the dressing with squid. Mix. To try, if necessary, add salt.
Insist hex squid for two hours in the refrigerator.
